MINI CHERRY COBBLERS

Love the taste of cherry pie, but don't have time for a from-scratch recipe? These super-easy, cute cobblers cut the cooking and prep time in half. Serve warm and topped with a scoop of ice cream.

INGREDIENTS
6 cups sweet cherries pitted and halved
1/4 cup granulated sugar
4 teaspoons all-purpose flour
1 teaspoon vanilla
1/2 teaspoon orange zest
1 tablespoon orange juice
Cobbler Topping:
1 1/2 cup all-purpose flour
1/4 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
pinch salt
1/3 cup cold butter cubed
2/3 cups buttermilk
1 teaspoon coarse sugar

METHOD
In a large bowl, toss together cherries, sugar, flour, vanilla, orange zest and orange juice. Spoon into six 8-oz (250 mL) ramekins.

Cobbler Topping: In a bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt. Using a pastry blender or two knives, cut in butter until crumbly. Add buttermilk, stirring with a fork to form soft, sticky dough. Top each ramekin with dough. Sprinkle with coarse sugar.

Place ramekins on the rimmed baking sheet. Bake in 375 F (190 C) oven until center of topping is no longer doughy inside, about 30 minutes. Let stand for 10 minutes before serving.
