Crispy Creole Roasted Zucchini
YIELD: 4-6 servings
PREP TIME: 10 minutes
3 large zucchini, cut into 1/4 inch slices
1 cup grated parmesan cheese
Zest of 1 lemon
1 1/2 teaspoons Creole seasoning
1 1/2 teaspoons Italian herb seasoning
1/2 teaspoon ground black pepper
Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper.
Pour the grated parmesan cheese, lemon zest, cajun seasoning, Italian seasoning, and black pepper in a large bowl. Mix well. Then add the zucchini slices. Toss well to coat the zucchini on all sides.
Lay the zucchini out on the baking sheet in a single layer. Roast in the oven, on the center rack, for 6 minutes. Then turn on the broiler and broil for 2-4 minutes until golden and crispy. Serve warm.
