ORANGE BLOSSOM MADELEINES

These sweet and buttery cake-like cookies have slightly crisp outsides and perfectly tender centers. You'll find madeleine pans—the seashell-shaped molds that give these French treats their signature shape—in specialty baking stores.

1/2 cup unsalted butter melted
1 tablespoon grated orange zest
1/2 teaspoon orange blossom water
1/4 teaspoon vanilla
3/4 cups all-purpose flour
1/2 cup granulated sugar
1/3 cup ground almonds
1/2 teaspoon salt
Orange and Honey Glaze:
1/4 cup icing sugar
1 tablespoon liquid honey
1 tablespoon orange juice
In a large bowl, whisk together eggs, butter, orange zest, orange blossom water, and vanilla. In a separate bowl, whisk together flour, sugar, ground almonds and salt; whisk into egg mixture just until combined.
Spoon heaping 1 tbsp into each mold of 2 greased 12-count madeleine pans. Bake in 350?F (180?C) oven until edges are golden, 12 to 15 minutes. Loosen from pan with tip of knife; invert onto racks. Let cool completely. Orange and Honey Glaze: In a small bowl, whisk together icing sugar, honey, and orange juice; brush over madeleines. Let stand until dry.
