French Toast Casserole

This French toast casserole is perfect for a special occasion breakfast or holiday brunch. Not only is it simple to prepare but, if you make it ahead and freeze it, it will take no time at all to reheat.

5 cups bread cubes
4 eggs, beaten
1 1/2 cups milk
1/4 cup granulated sugar, divided
1/4 teaspoon salt
1 teaspoon vanilla extract
1 tablespoon butter, softened
1 teaspoon ground cinnamon

1. Preheat the oven to 350°F. Lightly grease an 8x8-inch baking dish. 

2. Line the bottom of the dish with the bread cubes. 

3. Combine the eggs, milk, 2 tbsp. sugar, salt, and vanilla in a large bowl whisk to combine. Pour the egg mixture over the bread. 

4. Dot the bread mixture with butter and let stand for 10 minutes.

5.  Combine the remaining sugar and ground cinnamon then sprinkle it over top of the bread.

6.  Bake at 350°F for 45 to 50 minutes until the top is golden brown.

To Freeze:
Prepare the casserole according to the directions and freeze it, uncooked. When you are ready to use the casserole, thaw it to room temperature and bake it according to the directions.
