Boyfriend's Favorite Bacon Potato Bake

Let's be honest. Boyfriend's Favorite Bacon Potato Bake isn't just for your boyfriend. While this easy carb-a-licious casserole may be right up his alley, this is the perfect meal to make just about any time you need something easy and filling to eat. With plenty of Cheddar, potatoes, onions, bacon, and eggs to carry you through your day, this is one of the most satisfying meals you'll make all week. This easy casserole is budget-friendly and easy to prepare. Plus, it works for breakfast, lunch or dinner -- what could be better?

1 (20-ounce/570g) bag Simply Potatoes (aka frozen, shredded potatoes)
1 pound smoked bacon
1 thick sliced onion
1/2 pound Cheddar cheese, shredded
8 eggs

Preheat oven to 350 degrees F. Butter a 9 x 13-inch shallow baking dish.
Allow your bag of frozen potatoes to thaw (don't have to thaw completely). Pour potatoes into a mixing bowl.
Beat eggs separately in a large bowl, then pour them over potatoes.
Add shredded cheese, thick cut bacon, thickly sliced onion, and mix well until everything is combined. Pour the mixture into a greased baking dish and bake for about 45 minutes, or until the eggs are cooked.
Allow to cool slightly, then serve immediately.
