Berry Yogurt Pops

These berry yogurt pops are the perfect summertime treat. Not only are they easy to prepare, but they are good for you as well! Try this recipe with different berries according to whatever is in season at the time you are making them.

Ingredients:
1/2 cup water
1/2 cup/113g granulated sugar
1 1/2 cups plain Greek yogurt
2 tablespoons/42.5g honey
2 cups/488g fresh blueberries

Directions:
Combine the water and sugar in a small saucepan over medium-high heat. Cook, stirring occasionally until the sugar dissolves. 
Reduce the heat to medium and simmer for 5 minutes. Let the syrup come to room temperature then refrigerate for 1 hour.Stir the honey and yogurt into the chilled syrup. 
Spoon half of the yogurt mixture into popsicle molds and freeze until the yogurt begins to set. 
Sprinkle the blueberries into the yogurt then pour the rest of the yogurt mixture on top. 
Place the yogurt pops back in the freezer until frozen solid.
