Basic Bechamel Sauce

Makes 1 cup (250 ml)

2 tablespoons (30 ml) butter
2 tablespoons (30 ml) flour
1 cup (250 ml) milk
salt and pepper to taste
1. In a small saucepan over medium heat, melt the butter. Add the flour and cook, whisking constantly, for 1 minute.
2. Whisk in the milk and cook until the sauce thickens.
3. Season to taste with salt and pepper.
NOTE: Spices. Depending on the use you will make of this basic white sauce, you can infuse it of flavour. Start by infusing the milk with a peeled onion and 2 or 3 cloves. Also, you can add a pinch of cayenne pepper and a little grated nutmeg to the bechamel sauce to make it more interesting.
