Baked Cucumbers

3 large cucumbers
1 1/2 tablespoons (2 ml) onion, chopped
3 tablespoons (28.4g) butter
3/4 cup (60g) fine dry breadcrumbs
1/2 teaspoon (2 ml) salt
1 1/2 teaspoons (7 ml) parsley, finely chopped
1 tablespoon (15 ml) celery, chopped
1 cup (200g) ripe tomatoes, diced

1. Wash the cucumbers. Cut them in half, lengthwise. Scoop out as much pulp as possible without breaking the skin.
2. In a skillet, brown the onion in the butter.
3. Add the other ingredients including the cucumber pulp. Stirring constantly, cook for 5 minutes or until the mixture is dry.
4. Place the filling evenly in the cucumber shells.
5. Bake in a preheated 375ºF (190ºC) oven until the shells are soft and the mixture is brown on top.
