Baby Potato Bites

From: Peak of the Market (Winnipeg, Manitoba, Canada, 9/21/2016)

Ingredients:
20 tiny red potatoes
4 ozs (115 g) cream cheese
2 oz (56 g) gorgonzola cheese
1/4 cup (60 ml) bacon bits
1 tablespoon (15 ml) fresh basil, chopped

Directions:
1. Boil the potatoes until they are tender.
2. Cool the potatoes & slice each potato in half. Trim the potato bottoms so they don't tip.
3. Allow the cheeses to reach room temperature. Then, blend them well. Add the bacon bits & basil to the cheeses.
4. Dab a small spoonful of the mixture onto the top of each potato.
5. Set them on a cookie (baking) sheet & bake them for 10 minutes in a preheated 350ºF (180ºC) oven.

Serves 4
