THAI-STYLE VEGETABLE HUMMUS
Serve it as a snack, spread it on a sandwich, use it as a dip. Hummus is a healthy, versatile dish that's ready in no time flat.
Portion size 8 servings
1 can chickpeas (540 ml)
750 g Arctic Gardens Vegetables or Thai Style Stir Fry Mix
15 Thai basil tarragon leaves or more according to taste
1 1/2 tablespoon tahini
1 1/2 tablespoon Tamari
1 tablespoon vinegar
50 g roasted sesame seeds
50 mL canola oil or more as needed
Rinse the chickpeas thoroughly in cold water and drain. Using a little oil, saute the chickpeas and half the vegetables in a pan over medium-high heat, for ten minutes, stirring often.
Place in food processor with the remaining ingredients and mix until a nice smooth texture is created. Adjust the seasoning to taste.
Serve as a dip with the remaining vegetables, chips and pita bread.
