KOREAN SPAGHETTI & YUMMY MEATBALLS

MAKES 4 SERVINGS. HALF RECIPE FOR 2.
3 tbsp each soy sauce, red wine vinegar, and toasted sesame oil
12 green onions, sliced
2 tbs breadcrumbs
1 pound ground beef
14 oz/400ml jar spicy kimchi, drained, chopped
1 tbsp each oil and chili garlic sauce
8 oz/225g noodles
1 tbs toasted sesame seeds

In a bowl, mix 2 tbs soy sauce, 1 tbs each vinegar and sesame oil, 1/4 cup green onions, breadcrumbs, and beef, chop 1/4 cup kimchi, add to beef mixture. Form meatballs. Heat oil in a pan. Add meatballs, cook until cooked through. Lift meatballs to a baking pan, cover, keep warm. *Combine remaining soy sauce, vinegar, sesame oil, and 1/4 cup green onions. Stir in chili garlic sauce. Cook noodles according to package directions, drain, return to pot. Toss noodles with sauce and remaining kimchi. Divide noodles among 4 bowls, top with meatballs, sprinkle with remaining green onions and sesame seeds. SERVE and ENJOY...
