These are easy and simple to make and everyone loves these
Cook time: 10 Min Prep time: 10 Min Serves: 4
1 head cauliflower
2 large eggs
1/2 c cheddar cheese, shredded
1/2 c panko breadcrumbs
1/2 tsp cayenne pepper
1. Cut cauliflower into florets and cook in boiling water until tender about 10 minutes. Drain. Mash the cauliflower while still warm. Stir cheese, eggs, panko breadcrumbs, cayenne and salt to taste.
2. Coat the bottom of a griddle with olive oil over medium-high heat. Form the cauliflower or slower mixture into patties about 3 inches across.
3. Cook until golden brown and set about 3 minutes per side. Keep each batch warm in the oven while you cook the rest.
