White Chocolate Mousse in Melon

Yields 4 servings

1 cantaloupe or
Honeydew melon, seeded and cut into 4 quarters
4 strawberries
Fancy cookies
White Chocolate Mousse:
8 oz (250 g) white chocolate
3 tbsp (45 ml) butter
1/3 cup (75 ml) whipping cream 35 %

Arrange cantaloupe or melon quarters on four dessert plates. Place White Chocolate Mousse in decorating bag. Pipe White Chocolate Mousse into centre. Garnish each serving with one strawberry and one fancy cookie. Serve immediately.
White Chocolate Mousse:
Place all ingredients in double boiler and cook over low heat while stirring until chocolate and butter have melted. Remove from heat and let stand for 10 minutes. Add cream and whip mixture until thick and smooth. Set aside.
