Avocado Mezcal Cocktail

No Mexican Independence Day fiesta is complete without Mezcal. Blended with avocados, this spirit rises to the occasion.

1 avocado from Mexico, halved, pitted and peeled
¾ cup white mezcal
¾ cup lime juice
½ cup light agave nectar
1/3 cup Midori
¼ cup Cointreau
2 cups ice


Junior Merino’s Cactus & Lemongrass Rimmer
avocado wedges
In a blender, combine all ingredients; whirl until combined. Add 2 cups (500 mL) of ice and blend until smooth.

Serve in a glass rimmed with Junior Merino’s Cactus & Lemongrass Rimmer. Garnish with avocado wedge pressed in Junior Merino’s Hibiscus Rose Rimmer.
