WHOOPIE PIES USING CARROT CAKE

MAKES 2O WHOOPIE PIES.
2 cups flour [224 g]
1 tsp baking soda
3 tsp cinnamon
2 eggs
3/4 cup brown sugar [188 g]
1/2 cup canola oil [100 g]
1 1/2 cups shredded carrots [341 g]
1 oz pkg fat free sugar free instant white chocolate pudding mix  [28 g]
1/2 cup lowfat milk [112 g]
8 oz pkg lowfat cream cheese [224 g]

HEAT oven to 350 degrees. In bowl, combine flour, baking soda, cinnamon, and 1/2 tsp salt. Beat eggs, sugar, and oil until fluffy. Beat in flour mixture, stir in carrots. Drop tablespoons of batter onto greased baking sheets, making 4O cookies. Bake 7 min. or until done. Let cool. IN BOWL, whisk together pudding mix and milk until thickened, set aside. Beat cream cheese until smooth. Beat in pudding until smooth, spoon into pastry bag fitted with star tip. Pipe filling onto flat side of half the cookies, top with remaining cookies. SERVE & ENJOY...
