White Primavera Pizza

8 ounces shredded mozzarella cheese [224 g]
8 ounces ricotta cheese [224 g]
1/4 cup grated parmesan cheese
two 8 inch Boboli pre-baked pizza crusts
1 cup diced zucchini
1 cup broccoli florets
1/2 cup chopped green onions
1/2 cup sliced fresh mushrooms
1 medium Spanish onion, peeled and sliced into rings

Preheat oven to 450 degrees. Mix together mozzarella, ricotta and
parmesan. Spread evenly over pizza crusts. Sprinkle zucchini, broccoli,
green onions, mushrooms and onion rings over cheese. Place pizzas on
sheet pans. Bake about 8 to 10 minutes until cheese is melted and
crusts are crisp.

Makes two 8 inch pizzas.
