White Knight Chili


2 tablespoons olive oil
2 whole boneless chicken breasts, cut into bite size pieces
2 cans (about 19 ounces) cannelini beans, drained
2 cans (about 4 ounces) chopped green chilis
1 large onion, chopped
juice of 2 small limes
1 can (about 15 ounces) diced tomatoes with the juice
2 cloves garlic, crushed
1 tablespoon cumin powder
2 teaspoons oregano
2 tablespoons fresh cilantro, chopped
salt and pepper to taste


Heat olive oil in a pan. Saute chicken pieces until almost done.

Place chicken in slow cooker, along with cannelini beans, green chilis, onion, lime juice, tomatoes, garlic, cumin, and oregano. Stir to mix. Cook on low for 6 hours.

Serve with cilantro on top and salt and pepper to taste.
