Baked Turkey Meatballs








1 carrot
1 zucchini
1 – 1 1/2 pounds of ground turkey
1/2 cup of Panko breadcrumbs {I was lucky enough to find Italian Seasoned Panko}
salt/pepper to taste

finely chop or grate the carrot and zucchini
combine all the ingredients making sure not to over mix
roll into balls
bake @400 for about 20 minutes
They were such a hit, my kids ate them everyday for a week:)
