Baked Banana Oatmeal Muffins
Recipe adapted from Kath Eats Real Food
2 large bananas
2 cups of oats
1 teaspoon baking powder
1/4 teaspoon kosher salt
1 egg, beaten
1 1/2 cups of milk
1 tablespoon of brown sugar
Preheat oven to 375.
Slice one large banana and layer 1/2 the banana in a muffin tin coated with cooking spray (one slice per muffin or more if you have.)
Combine your dry ingredients in a bowl; oats, baking powder and salt.
In another bowl combine the egg, one mashed banana ,milk and vanilla.
Pour the wet ingredients into the dry and mix well. Pour on top of sliced bananas and then top with remaining bananas slices.
Bake for 20 minutes. After the 20 minutes top the oatmeal and bananas with the brown sugar and increase the heat to broil. Broil for 3-4 minutes until the top is bubbly golden brown.
