Baked Banana & Blueberry Oatmeal








Serves 4
A delicious and perfect Saturday morning breakfast for the entire family!

Ingredients
2 cups old-fashioned Quaker Rolled Oats
1 teaspoon baking powder
1 1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup maple syrup
1/4 cup honey
2 cups milk
1 large eggs, lightly beaten
4 tablespoons unsalted butter, melted and cooled slightly
2 teaspoons vanilla extract
2 bananas, peeled and chopped into bite sized pieces
1 1/2 cups frozen blueberries (thawed at room temp for 10 minutes)
1/2 cup honey flavored granola

Instructions
1] Preheat your oven to 375°. Lightly butter the inside of a 2 quart casserole dish.
2] In a medium mixing bowl combine your rolled oats, baking powder, cinnamon and salt. Set aside.
3] In a bowl combine your eggs, maple syrup, honey, milk, eggs, butter and vanilla. Whisk together well.
4] Cover the bottom of your casserole dish with 1 of the chopped bananas. Top with 1/2 of the blueberries.
5] Pour your dry mixture over the fruit and spread out evenly. Pour your liquid ingredients over the oats. 6] Top with the remaining banana and blueberries.
7] Bake in the oven for 35-40 minutes. The top should start to brown and the oats should start to set. Remove from the oven and sprinkle the honey flavored granola over the top and return to the oven for an additional 5-7 minutes of baking time.
8] Remove from the oven and let stand for 10 minutes before serving.
