Avocado Cucumber Salmon Sandwich (makes two sandwiches)

1 (4 oz) package of smoked salmon
1 ripe avocado
2 tbs of low fat cream cheese
1/2 tsp of honey or whole grain mustard
1/2 a lemon
1 small cucumber
2 large slices of whole wheat bread
salt and pepper

1] Place slices of bread in the toaster oven.
2] While it toasts, cut the avocado, remove the pit and place the insides in a small bowl.
3] Add the cream cheese, mustard, some salt, some pepper, and a small squeeze of lemon juice to the avocado and mash it all together until it is all incorporated and creamy.
4] Cut the cucumber into thin slices. (I did not remove the skin, but you can if you don't like it.)
5] When the bread is ready divide the avocado mixture between the two slices.
6] Add the sliced cucumber on top of the avocado.
7] Add the smoked salmon on each slice of bread.
8] Drizzle with lemon juice.
