WHITE CHOCOLATE CHIP COOKIES

MAKES 16 COOKIES.

2 cups flour [224 g]
1/3 cup wheat flour [37 g]
1/2 tsp each baking powder, baking soda, and salt
3/4 cup each unsalted butter [188 g]
3/4 cup each sugar [144 g]
1/2 cup brown sugar [75 g]
1 egg
1 tsp vanilla
1 cup white chocolate chips [168 g]

Heat oven to 325 degrees. Line 2 baking sheets with parchment. In a bowl, combine flours, baking powder, baking soda, and salt. Beat butter and sugars in a bowl until fluffy. Beat in egg and vanilla. Add flour mixture, mixing until combined. Fold in chips. Spoon batter 1/4 cup per cookie onto baking sheets. Bake until set 18 min. Transfer parchment and cookies to wire racks to cool.
