STEAK SANDWICH WITH TOMATO-CHUTNEY

MAKES 2 SERVINGS.

1/2 pound steak [227 g]
1/2 pint cherry tomatoes, halved
1 tbs raisins, chopped
1 tbs cider vinegar
1/2 tbs brown sugar
Pinch of Italian seasoning
3 green onions, sliced
4 slices bread, toasted
1 cup shredded lettuce
1 oz cheddar cheese, grated [28 g]

Heat broiler. Line a baking sheet with foil. Season steak with salt and pepper, broil to desired doneness. Transfer to a cutting board, let rest 5 min. before slicing. In a pan, make chutney: Combine tomatoes, raisins, vinegar, brown sugar, Italian seasoning, salt and pepper. Bring to a simmer, cook until tomatoes have broken down and mixture has slightly thickened. Remove from heat, fold in green onions. Form sandwiches with bread, chutney, steak, lettuce, and cheese.
