2 sticks unsalted butter
2 cups flour
1/4 tsp salt
1 tsp vanilla
1 1/4 cups sugar
1 1/2 cups diced rhubarb
3/4 pound strawberries, hulled, sliced
1 tbs lemon juice
2 tbs cornstarch

Heat oven to 375 degrees. Line an 8" square pan with foil, leaving an overhang. Mist with cooking spray. MAKE CRUMB MIXTURE---Combine butter, flour, salt, vanilla, and 1 cup sugar until mixture resembles coarse crumbs. Spread 1/2 of mixture over bottom of pan, press down. MAKE FILLING---Combine rhubarb, berries, lemon juice, cornstarch, and remaining sugar in a bowl. Spread over crust in pan. Sprinkle remaining crumb mixture over fruit. Bake until browned 55 min. Let pan cool. Using overhang, lift bars out, peel back foil, cut into 9 squares. SERVE and ENJOY...
