Creamy Irish Coffee Martini

The classic hot coffee beverage is reinvented as a cool cocktail -- it's perfect for St. Patrick’s Day celebrations.

2 ounces Irish cream liqueur
Green sprinkles ; optional   
2 ounces Irish whiskey
Vanilla Whipped Cream:   
2 ounces brewed strong coffee; chilled
1 cup heavy cream   
1/4 teaspoon McCormick(r) Pure Vanilla Extract
1/4 cup confectioners’ sugar   
Vanilla Whipped Cream (recipe follows)
1 teaspoon McCormick® Pure Vanilla Extract
 
Fill cocktail shaker half full with ice. Add first 4 ingredients; shake until well mixed and chilled. Strain into martini glass. Top with a dollop of Vanilla Whipped Cream and green sprinkles, if desired.
Vanilla Whipped Cream:
Beat cream, confectioners’ sugar and Vanilla Extract in medium bowl with electric mixer on high speed until stiff peaks form.
Makes about 2 cups.
Wet outside rim of martini glass with McCormick® Pure Vanilla Extract. Dip glass in coarse sugar to lightly coat.
