CHEESY POTATO PANCAKES

MAKES 6 SERVINGS.
2 PANCAKES EACH.

3 cups mashed potatoes
2/3 cup shredded cheddar cheese
2 tbs chopped green onions
1 egg, beaten
3 tbs plus 1/2 cup flour
3 tbs oil
Sour cream

In a bowl, stir together potatoes, cheese, green onions, egg, and 3 tbs flour until combined. Divide mixture into 12 portions. Roll each portion into a ball, then flatten it into a pancake. Place remaining flour in a dish, dredge each pancake in flour. Heat oil in a pan. Fry pancakes until golden and crispy. Transfer pancakes to paper towels, sprinkle them with salt. Top potato pancakes with sour cream. SERVE and ENJOY...
