Basil Marinated Tomatoes

From: Peak Market (Winnipeg, Manitoba, Canada - 3/14/2015)

Ingredients:

4 medium tomatoes, sliced
1/4 cup (60 ml) fresh parsley, chopped
3 tablespoons (45 ml) olive oil
1 tablespoon (15 ml) white wine vinegar
1 tablespoon (15 ml) red wine vinegar
1 tablespoon (15 ml) fresh basil, chopped
3/4 teaspoon (3 ml) granulated sugar
1/4 teaspoon (1 ml) salt
1/4 teaspoon (1 ml) pepper

Directions:

1. Arrange the tomato slices on a plate. Sprinkle them with parsley.

2. Whisk together the olive oil, white wine vinegar, red wine vinegar, basil, granulated sugar, salt & pepper.

3. Pour this mixture over the tomatoes.

4. Cover the plate of tomatoes & refrigerate for 1 hour.

Serves 8
