banana chocolate chips & walnuts cake
100 gm Butter
50 gm Margarine
150 gm Sugar
1/2 tsp Salt
3 nos Eggs
200 gm High Protein Flour
1 tsp Baking Powder
1/2 tsp Baking Soda
30 gm Fresh milk
150 gm Banana (rastali)
1 tsp Banana Essence
50 gm Chopped Walnuts
100 gm Chocolate chips
1.Slightly mash banana and put aside at least 30minutes before use.
2.Soften butter and margarine to room temperature before use.
3.Sift together the high protein flour, baking powder and baking soda.
4.Preheat oven at 180??C. Lightly grease a 9?? X 5?? cake tin (or 7 inch square cake tin) and line with greaseproof paper (or Baking paper).
5.Beat butter, margarine, sugar and salt on speed low for 1 minute and high speed for 3 minutes or until fluffy. Scrape the side bowl.
6.Add in egg gradually, scrape and mix for 2 minutes on high speed.
7.Then add in the sifted flour with baking powder and baking soda on low speed for about 1 minute. Add in milk and banana essence until well combined.
8.Add mashed banana, chocolate chips and walnuts into mixture by using a wooden spoon or spatula. (DO NOT over blend or take too long time waiting to put into preheated oven, the result become banana and chocolate chips only stay at the bottom of the cake)
9.Pour mixture into the prepared tin; decorate the top with some chopped walnuts and chocolate chips.
10.Bake at 180C for about 45 minutes. Leave in the tin to cool slightly before turning out on to wire rack. Allow completely cold before store it in a food container.
