Baked Onions in Cheese

From: Peak Market (Winnipeg, Manitoba, Canada - 4/4/2015)


2 1/2 lbs (1.15 kg) small cooking onions, peeled
1/4 cup (56 G) butter
1/4 cup (28 G) flour
1 teaspoon (5 ml) salt
2 cups (500 ml) milk
1 cup (112 G) cheddar cheese, shredded
1/2 cup (56 G) bread crumbs
1 tablespoon (14.18 G) butter, melted


1. Cook the onions in boiling salted water until just tender; about 25 minutes. Drain.

2. Transfer the onions to a buttered baking dish.

3. Melt the 1/4 cup (57 g) butter in a saucepan. Stir in the flour & salt until smooth.

4. Add the milk, stirring constantly. Continue cooking until thickened.

5. Add the cheddar cheese & continue cooking & stirring over low heat until the mixture is blended.

6. Pour the sauce over the onions.

7. Mix the breadcrumbs and melted butter together. Sprinkle the breadcrumb mixture over the sauce. Bake in a preheated 350ºF (180ºC) oven for 25 minutes or until thoroughly heated & browned.
