Authentic Mexican-style Shredded Pork Recipe

This recipe is easy to prepare in a slow cooker. Serve the shredded pork on buns or on tortillas, along with the onion slices and green chili that are cooked up with the meat. For a different twist on this recipe, try serving the shredded pork on top of rice with shredded cheese, salsa and a little bit of sour cream
3 pounds boneless pork shoulder cut into 2-inch cubes [1.3 kg]
1 onion, sliced
2 garlic cloves, minced
1/4 cup chipotle sauce [60 ml]
1/4 cup cilantro [60 ml]
1/4 cup lime juice, fresh [60 ml]
1/2 cup salsa [125 ml]
3 cups water [750 ml]
Mix together the chipotle sauce, garlic, cilantro, lime juice and salsa. Place cut-up pork pieces in the slow cooker with the onion slices on top of the pork pieces. Pour mixture over pork and add water.
Cook on low heat for about 8 hours, or until pork is tender. Remove pork from slow cooker and place on a platter. Shred pork using two forks. Pour the sauce into a large bowl and add the pork.
