Potato and Ham Omelet

Yields 6 servings

2 potatoes, peeled and sliced
3 tbsp (42.6 g) butter
1 zucchini, sliced
4 green onions, chopped
1 red bell pepper, trimmed and cut into julienne
8 oz (224 g) smoked ham, sliced and cut into strips
8 eggs, beaten
1/2 cup (56 g) grated Canadian Mozzarella cheese
1/2 cup (56 g) grated Canadian Emmental cheese

In a saucepan of boiling water, cook potatoes for 7 minutes or until cooked. Drain and slice. In large non-stick skillet, sauté potato slices, zucchini, green onion, red pepper and ham in butter for 3 minutes while stirring. Season to taste with salt, pepper, paprika and cumin. Reduce heat to medium and stir gently.

Stir in half the beaten eggs. Top with half the Canadian Mozzarella and half the Canadian Emmental cheese. Add remaining eggs and top with remaining cheese. Reduce heat, cover skillet halfway and cook without stirring until eggs are well done. Place skillet under the broiler and grill omelette for 1 to 2 minutes while checking.

Serve immediately with homemade ketchup.
