Yields 4 panini
4 small panini buns*
3 tbsp (45 ml) olive oil
1 tbsp (15 ml) dried Italian herbs
1/2 red pepper, cut into julienne strips
1/2 green pepper, cut into julienne strips
8 thin slices of roast pork**
8 slivers of Canadian Parmesan cheese***
1 tbsp (15 ml) balsamic vinegar
Pepper, to taste
1 tbsp (15 ml) chopped chives
Instructions Cut panini in two lengthwise, brush with olive oil and sprinkle with herbs. Brush peppers with oil and grill peppers in oven for 5 to 6 minutes.
Place roast pork slices on panini, then add peppers and Canadian Parmesan* cheese. Sprinkle with balsamic vinegar, season with salt and pepper, place on a baking sheet and cook in 275 °F (140 °C) oven for 5 to 7 minutes. Sprinkle with chopped chives.
Tips *You may substitute Italian style hard rolls.

***This dish can also be prepared with a few slices of Canadian Mozzarella cheese, in which case panini should be grilled for 1 to 2 minutes.
