Italian Christmas Pudding (Pudding natalizio)

Yields 6 to 8 servings

2 2/3 cups (650 ml) milk
1 cup (200 g) sugar
1 cup (250 g) brown sugar
14 oz (392 g) semolina
14 oz (392 g) Sultana raisins
3/4 cup (105 g) pine nuts
4 tbsp (60 ml) candied fruits

Pour milk in saucepan and add sugar and brown sugar. Cook over medium heat while stirring and bring to boil. Immediately sprinkle with semolina while stirring. Let boil over low heat while stirring, and cook until mixture thickens. Stir in a touch of vanilla, raisins, pine nuts and candied fruits.

Pour mixture into 2 4 cups (1 L), or larger, lightly buttered decorative moulds and refrigerate for a few hours. Remove from mould and serve.
