Double Chocolate Muffins

Yields 12 muffins

2 cups (260 g) all-purpose flour
1/3 cup (75 ml) sweetened chocolate powder ('Quick' style)
1/2 cup (100 g) sugar
1 tbsp (15 ml) baking powder
1 1/3 cup (223 g) chocolate chips
Pinch of salt
2 eggs, beaten
1 cup (250 ml) milk
1/4 cup (50 ml) vegetable oil

Preheat oven to 375 °F (190 °C).

In bowl, combine flour, chocolate powder, sugar, baking powder, chocolate chips and salt. Set aside.

In large bowl, whisk together egg, milk and oil. Gradually stir dry ingredients into egg mixture. Stir just enough to moisten. Spoon batter into buttered muffin cups, filling each 2/3 full.

Bake for 20 minutes or until toothpick inserted in centre comes out clean. Let cool for 10 minutes before removing from cups. Serve.
