Come out of your shell with a Western Omelet Roll-up

Cooking Time 4 - 5 mins
Yields 1 roll-up

1 1/2 tsp (7 ml) butter
1 tbsp (15 ml) chopped red pepper
1 tbsp (15 ml) chopped green onion
1 tbsp (15 ml) chopped ham
2 eggs, beaten
1 large flour tortilla
Leafy lettuce
2 deli-thin slices Canadian Swiss or Havarti cheese
Barbecue sauce or Ranch salad dressing

Melt butter in non-stick 8-inch (20 cm) frypan. Cook red pepper, onion and ham over medium-high heat 1 minute. Add eggs; cook 2 minutes longer, lifting edges of omelet to allow liquid portion to flow under. Turn omelet over with large lifter; cook 1 minute longer. Remove from pan; cool for 5 minutes.

Line tortilla with lettuce, Canadian Swiss or Canadian Havarti cheese, omelet and barbecue sauce. Roll up tightly.
