Yields 36 to 48 cookies
1/2 cup (114 g) softened butter
2/3 cup (134 g) sugar
1 large egg
2/3 cup (113 g) peanut butter chips
1/4 cup (50 ml) milk
1/2 tsp (2 ml) baking soda
1 tsp (5 ml) baking powder
Pinch of salt
2 cups (260 g) all-purpose flour
1 cups (107 g) sweetened coconut flakes
Instructions Preheat oven to 375 °F (190 °C).
In bowl, whip together butter, sugar and egg. Stir in peanut butter chips and milk. Mix well. Add baking soda, baking powder and salt, stirring gently. Gradually add flour and coconut while stirring.
Drop mixture by spoonfuls onto buttered cookie sheet. Bake for 12 minutes. Repeat with remaining dough. Let cool for few minutes before serving.
