Borgonzola Canapés (Tartine al Borgonzola)

Course Hors D'oeuvres and Appetizers
Prep. Time 20 mins
Yields 2 baguettes

1 lb (500 g) softened butter
1 1/3 lb (650 g) Canadian Borgonzola cheese, cut in small pieces
1 cup (28 g) chopped parsley
1/4 cup (50 ml) lemon juice
Freshly ground black pepper
2 baguettes, thinly sliced
Stuffed olives, cut in halves
Red bell peppers in oil, cut in thin strips

In food processor, or blender, beat butter and Canadian Borgonzola cheese, until smooth. Add parsley, pepper, lemon juice and gently mix.

Spread baguette slices with cheese mixture. Season with freshly ground pepper. Garnish with half olives and red pepper julienne strips. Serve immediately.
